What was the hardest part? The hardest part was the first week — the “detox’ week. Cutting out the carbs, sugar and salt was difficult for the first few days but the cravings stopped after that and I began to feel clearer and more energetic.
What is your new favorite healthy food or recipe? My new favorite healthy recipe is Joy’s Chicken Parmesan. I don’t miss the breading at all and it is quicker and easier to prepare than traditional chicken parm. The best thing is everyone loves it so it is my “go to” on busy nights.
What one change was most effective for helping you lose weight? I think that eating breakfast was one change I made that has really helped me lose weight. I boosted my metabolism, had more energy and was not ravenous at lunchtime by eating one of Joy’s recommended breakfasts.
What was the best compliment you’ve received? I have gotten a lot of compliments! One thing I am so happy about was that a goal of mine was to be able to tuck my shirt in my jeans and I was able to do that for the finale episode. That made me feel good even in jeans and a cast when the others looked so fabulous in their beautiful dresses!
