In addition to its pivotal role in skin-cell renewal, beta-carotene acts as a potent antioxidant, sopping up damaging free radicals that accelerate skin aging. Fend off wrinkles with my recipe for Roasted Balsamic Carrots: Cut 1 pound of peeled carrots into half-inch wedges. Spread the carrots over half of a large sheet of aluminum foil, and sprinkle them with ¼ cup balsamic vinegar, 2 tablespoons minced fresh rosemary, 2 cloves minced garlic, ¼ teaspoon paprika, and some salt and pepper. Drizzle the carrots with 1 tablespoon olive oil and fold the foil over to create a tightly sealed packet. Place on a baking sheet and bake in a preheated 400° oven for 25 minutes, or until the carrots are tender.
