Traditional meatloaf is made with fatty ground chuck and refined white bread crumbs, but I've mastered a lighter, lower-carb version
by substituting lean ground turkey for the beef and omitting the bread crumbs. Plus, I mix in chopped red bell peppers and carrots to add a blast of nutrition and a pop of color. The meat mixture is baked in a muffin pan instead of the usual loaf pan, creating individual mini-meatloaves that offer built-in portion control.
