A Skinny Soup That Curbs Hunger

Made with a colorful mix of non-starchy vegetables, this hearty but ultra low-cal soup is loaded with fiber and water to help fill you up fast. cup(s) onion(s), diced
stalk(s) celery, diced (1 1/2 cups)
ounce(s) mushrooms, sliced
cup(s) broth, reduced-sodium chicken, or vegetable broth
carrot(s), sliced (about 1 cup)
zucchini, diced (2 cups)
cup(s) cabbage, roughly chopped (1/2 cabbage head)
medium cauliflower, chopped (fresh or frozen)
cup(s) beans, green, chopped (fresh or frozen)
can(s) tomatoes, diced, 15 ounces (preferably no salt added)
tablespoon vinegar, red wine, or may use balsamic vinegarPreparation
In a large stock pot coated with
non-stick cooking spray, sauté the garlic, onion, celery, and
mushrooms over medium heat for 10 minutes, or until tender.

Directions: Allow soup to cool to room temperature. This recipe can be prepared
up to 3 days in advance when stored in the fridge. Two-cup portions may be
