When my producer at the Today show mentioned her delicious sweet potato dish, my mouth was watering! Her version was meant for the grill but due to rain the weekend I got the recipe, I created an indoor version. I hope you love it as much as I do

This recipe makes 1 Serving
Ingredients:
  • 1 medium sweet potato
  • 1/2 teaspoon garlic powder
  • 1/2 large white onion, thinly sliced
  • 2 teaspoons margarine, trans-fat free
Preparation:

Preheat the oven or toaster oven to 400° F. Line a baking sheet with aluminum foil or parchment paper; set aside.

With the tines of a fork, prick the potato several times. Microwave the potato on high for about 5 minutes.

Make a large, lengthwise slit down the center of the potato. Sprinkle potato with garlic powder and season with a pinch of salt. Press the onion slices inside, and top with the margarine.

Bake on the top rack of the oven for 9 – 10 minutes, until the onion begins to brown and the potato is tender when pierced with a fork. Serve immediately.
