To maximize nutrition in this fall favorite, I leave the fiber-rich peels on the apples and avoid adding extra sugar—the fruit itself provides plenty of natural sweetness.

This recipe makes 6 Servings
Ingredients:
  • 4 medium apples, cored and cut into quarters
  • 1½ teaspoons lemon juice
  • 1 to 2 teaspoons 100% apple juice (optional, for added sweetness)
  • 1 whole cinnamon stick
  • ½ teaspoon apple pie spice
  • ½ teaspoon grated fresh ginger root (optional)
Preparation:

In a saucepan over medium heat, combine the apples, lemon juice, and apple juice (if desired).

Cover the pan and bring the liquid to a boil. Reduce the heat to low and add the cinnamon stick, apple pie spice, and ginger (if desired).

Simmer, covered, until the apples are soft, about 30 minutes.

Remove the cinnamon stick and transfer the ingredients to a blender or food processor. Purée until smooth (or pulse for a chunkier, more rustic sauce).

Serving size is ½ cup.
