Sweet and creamy coleslaw is a must-have for every picnic or barbecue. But don’t let this veggie-loaded side dish fool you—it will set you back almost 300 calories! My health-ified version replaces the mayo and sugar with plain nonfat Greek yogurt to cut back on fat and carbs without skimping on flavor. Big bonus: You’ll still have plenty of room for dessert!

This recipe makes 6 servings
Ingredients:
  • ½ cup plain nonfat Greek style yogurt
  • 2 tablespoons low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 teaspoons white wine vinegar (or apple cider vinegar)
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup matchstick carrots
  • ¼ cup thinly sliced red onion
  • ½ cup chopped scallions (optional)
  • ¼ cup dried cranberries (optional)
  • ¼ teaspoon sea salt
  • ⅛ teaspoon fresh crushed black pepper
Preparation:

In a medium bowl, combine the yogurt, mayo, mustard and vinegar.

In a large bowl, combine the cabbage, carrots, onions, and optional scallions and cranberries, if desired. Pour the dressing over the cabbage mixture and toss to combine. Season with salt and pepper. Store in the fridge before serving.

Makes 3 cups; each serving is ½ cup
