This delicious and bright side dish is a terrific complement to grilled chicken or halibut. Though, I sometimes enjoy these bite size nibbles on its own as a healthy snack.

This recipe makes 2 servings
Ingredients:
  • 1 pint tomatoes, cherry or grape (whole or sliced in half)
  • Garlic powder to taste
  • Kosher salt and pepper to taste
  • 1 to 2 tablespoons balsamic vinegar (optional)
  • Basil (optional)
Preparation:

Spread tomatoes on a baking sheet and mist with olive oil spray. Sprinkle with the garlic powder, salt and pepper. Add balsamic vinegar if desired. Roast in the oven at 450 degrees for 15 to 20 minutes (or up to 30 minutes, depending on your preferred texture).

Serving size: 1 cup
