This recipe makes 2 Servings
Ingredients:
  • 4 cups cubed pumpkin, fresh
  • 1/2 onion, sliced
  • 2 teaspoons dried rosemary
  • Kosher salt, to taste
  • ground black pepper, to taste
  • 1/4 cup crumbled Gorgonzola (or feta) cheese
Preparation:

Preheat oven to 400 degrees.

Toss pumpkin, onion, dried rosemary, salt, and pepper with olive oil spray. Spread on baking sheet in one layer and bake for 20 min (tossing halfway through). Once pumpkin is tender, remove from oven and serve with Gorgonzola crumbled on top.
