Ingredients:
  • 1 zucchini squash
  • 1 yellow summer squash
  • 2 tablespoons grated parmesan cheese
  • Squeeze of fresh lemon juice
  • Kosher salt, to taste
  • Ground black pepper, to taste
Preparation:

Wash summer squash and zucchini well.

Use a vegetable peeler to create long pasta-like strands.

Toss with a squeeze of lemon juice and then sprinkle grated parmesan cheese, and salt and pepper to taste.
