This recipe comes from Joy Fit Club member Megan Anderson. You can’t go wrong with this super simple, yet totally filling breakfast. Make a batch of quinoa ahead of time and use it for your grain in any meal—not just this dish.

This recipe makes 1 serving
Ingredients:

3 cups raw spinach
½ cup prepared Quinoa (use this recipe)
1 egg
½ oz feta cheese

 

Preparation:

Wilt spinach in a frying pan coated with oil spray over medium-high heat. Add the prepared quinoa and cook for 3 to 5 minutes. Transfer the mixture to a bowl and set aside.

Cook the egg to your preference (scrambled or sunny side up). Top the quinoa-spinach mixture with the cooked egg and a sprinkle of feta cheese. Enjoy!
