Take your French toast up a notch by adding a bit of canned pumpkin puree. You’ll score some beta-carotene (for healthy hair and skin) and potassium (to help manage blood pressure). Not to mention, you’ll add some delicious flavor to your morning meal, too!

This recipe makes 1 serving
Ingredients:
  • 2 egg whites
  • ⅓ cup canned pumpkin puree
  • ½ cup two percent milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 slice whole grain bread
  • 1 teaspoon maple syrup
Preparation:

In a large, flat bowl, scramble egg whites with pumpkin puree and milk. Add vanilla extract,  cinnamon and nutmeg, and stir to combine.

Dip whole grain bread into mixture and make sure to coat thoroughly. Flip bread over and repeat.

Cook bread in a skillet over medium heat until both sides are golden brown, about 3 to 4 minutes per side.

Drizzle with maple syrup. Enjoy!
