I’ve combined two all-time kid-favorites — PBJ and French toast — into one delicious breakfast…so you don’t have to choose between the two. Serve this tasty treat to fuel up your little ones for the school day!

This recipe makes 2 Servings
Ingredients:
  • 2 slices whole-wheat bread
  • 2 tablespoons natural peanut butter (or preferred nut or seed butter)
  • 2 teaspoons all-fruit jam
  • 1 whole egg
  • 2 tablespoons fat-free milk
Preparation:

Trim the crusts off the bread. Spread each slice with 1 tablespoon of the peanut butter and 1 teaspoon of the jam. Fold each slice of bread in half.

In a small bowl, whip the whole egg with the skim milk.

Generously coat a skillet with oil spray and preheat over medium-high heat. Dunk and coat the 2 folded bread halves in the egg mixture. Place the folded bread halves in the skillet and cook for 1-2 minutes per side, or until crisp.

Makes 2 servings.
