Pizza lovers can get their cheesy fix with this simple snack-size recipe. Tailor your mini pies by adding all sorts of favorite vegetables and seasonings.

This recipe makes 1 serving
Ingredients:
  • Sliced mushrooms, as desired
  • Diced onion, as desired
  • Diced bell pepper, as desired
  • Broccoli florets, as desired
  • Spinach leaves, as desired
  • Oil spray
  • 1 mini whole grain pita or English muffin
  • 2 to 4 tablespoons marinara sauce
  • ¼ cup part-skim mozzarella cheese, shredded
  • Dried oregano (optional)
  • Red pepper flakes (optional)
Preparation:

Sauté desired veggies in a skillet coated with oil spray over medium heat until tender-crisp, about 5 minutes.

Toast the pita, tortilla, or English muffin in 425 degree oven (or toaster oven) until lightly browned and crispy. (If using an English muffin, split the muffin and toast the two halves.)

Spread the marinara sauce over the toasted “crust,” all the way to the edges to prevent burning. Sprinkle on the cheese and top with the sautéed veggies. Place back in the oven or toaster oven and bake until the cheese is melted and bubbly, 5 to 10 minutes. Sprinkle with oregano and/or crushed red pepper flakes if desired.
