One of our fantastic Joy Fit Club members, Tiffany McCoy (pssst…she lost 112 pounds!), shared her go-to recipe for grilled chicken with us. She adds mushrooms to increase the volume (and nutrition) of her dish without piling on the calories, and seasons it with spices to add flavor and fun. Give this ridiculously simple recipe a shot—it may just become a staple in your dinner rotation.

This recipe makes 6 Servings
Ingredients:
  • 1/2 cup lemon juice (from about 3 lemons)
  • 1 teaspoon kosher salt
  • 1 teaspoon cayenne pepper
  • 1/4 teaspoon crushed red pepper
  • 6 boneless, skinless chicken breasts (about 4 ounces each)
  • 8 ounces sliced mushrooms
Preparation:

Add lemon juice, salt, cayenne pepper and crushed red pepper flakes to a re-sealable bag with 1 cup water. Poke holes in the chicken breasts with a fork before adding the chicken and mushrooms to the bag. Marinate for about 1 hour.

Coat a non-stick grill pan with oil spray and place over medium heat. Add the chicken and mushrooms. Cook for about 10 minutes before flipping chicken breasts and adding an additional sprinkle of cayenne pepper and salt, to taste. Cook for 10 more minutes or until chicken is cooked through.
