This recipe makes 4 Servings
Ingredients:
  • 4 medium plum tomatoes, seeded and chopped
  • 1/2 medium green bell pepper, diced
  • 1/2 medium orange bell pepper, diced
  • 1 bunch scallions (green onions), chopped
  • 1 medium lime, juiced
  • 1 pinch ground black pepper
  • 1 pinch cayenne pepper
  • fresh cilantro (for garnish)
  • unlimited endive leaves (for serving)
Preparation:

Combine all ingredients (except endive and cilantro) in a bowl. Let stand for two minutes so tomatoes can marinate in lime juice. Serve surrounded by endive leaves, and garnish salsa with cilantro.
