This recipe makes 1 Serving
Ingredients:
  • 1 cup cooked brown rice
  • 1/2 cup cooked black beans (if using canned, drain and rinse well)
  • 1/4 cup salsa
  • 1 teaspoon chopped cilantro (for optional garnish)
Preparation:

In a microwave-safe bowl, combine the rice, beans, salsa, and 1 to 2 tablespoons of water and mix thoroughly. Microwave for 2 minutes or until hot, and garnish with cilantro (if using)
