Black Bean Brownies

These brownies are a sneaky way to add ample nutrition into a yummy treat. I had Today Show co-host Matt Lauer try a batch on-air, and he was pleasantly surprised by the rich and fudgy taste.

This recipe makes 20 Servings
  • 1 fifteen-ounce can no-salt-added black beans, drained and rinsed
  • 1 box brownie mix plus egg, water, oil, or applesauce in amounts called for on box

Place can of black beans into a colander and rinse thoroughly. Put beans back into the can and add enough water to cover the beans. Put beans and water into blender and puree well.

Combine puree with a standard box of brownie mix. You can add (or choose to omit) the egg, water, oil (or applesauce) that the mix calls for. Bake according to box directions.
