Black Bean Brownies

These brownies are a sneaky way to add ample nutrition into a yummy treat. I had TODAY show co-host Matt Lauer try a batch on-air, and he was pleasantly surprised by the rich and fudgy taste. I love that they're more than half the calories of a coffee-shop brownie.

This recipe makes 20 Servings
Ingredients:
  • One 15-ounce can black beans, drained and rinsed
  • 1 box brownie mix
  • 1 egg, beaten (optional)
Preparation:

After draining and rinsing, put the beans back into the can and add enough water to cover the beans. Put the beans and water into a blender and puree well.

Combine the bean puree with a standard box of brownie mix in a mixing bowl. Add the egg if you would like a softer, spongier consistency. Mix thoroughly and bake according to box directions.
