Vegetarians (and meat eaters) rejoice! These portobello “burgers” are juicy, delicious and a cinch to make. Whip up this recipe for meatless Monday, Tuesday, or any day of the week.

This recipe makes 1 portobello mushroom
Ingredients:
  • 3 portobello mushrooms, cleaned, stems removed
  • 3 tablespoons chopped onion
  • 4 cloves garlic, minced
  • 3 tablespoons balsamic vinegar
Preparation:

Place mushrooms on a plate with gills up. In a small bowl, combine onion, garlic, and vinegar.​ Pour mixture evenly over mushroom caps and let sit for 45 minutes.

Liberally coat a skillet with oil spray and warm over medium heat. Grill mushrooms on both sides for 4 minutes, or until mushrooms are lightly browned. Enjoy.
