Skewers aren’t just for the grill! I love using them at breakfast, alternating whole grain waffles with whatever fruit is in season…or in my fridge. In this recipe, I make use of cinnamon-flavored apples to create the perfect fall dish. Feel free to swap in pears or peaches, or whatever fruit you’re in the mood for.

This recipe makes 2 servings (1 skewer per serving)
Ingredients:

1 medium apple, cut into ¼-inch slices or chunks

2 whole grain waffles

Ground cinnamon

2 skewers

Preparation:

Spray skillet with cooking spray and heat on medium-high heat. Add the apples to the warm pan and sprinkle with a dash of ground cinnamon. Sauté the apples for 2 to 3 minutes per side.

While the apples are cooking, toast the whole grain waffles. Then cut each of them into 4 pieces.

Using 2 skewers, alternate waffle pieces with 1 to 2 apple slices. Drizzle 1 teaspoon of maple syrup on each skewer before serving.

Note: Nutrition information includes the maple syrup; subtract 40 calories and 4 grams of added sugar if you skip the syrup.
