PREPARATION
Spray a small microwave-safe bowl with oil spray. Crack egg and egg whites into the bowl and whip together with a fork. Add one heaping tablespoon of salsa and a squirt of hot sauce, if desired. Mix well. Microwave for 2 minutes, or until egg is just cooked through.
If you skip the salsa, it’s ready in just a minute and 20 seconds!
